Easy Green Tomato Frittata

This recipe is adapted from Guiliano Bugialli -I have been making it for over 20 years.  Tom just enjoyed this for lunch today.

1 pound green tomatoes

1/4 cup flour for dredging

1/4 cup extra-virgin olive oil, plus 1 tablespoon extra-virgin olive oil

Green Tomato Frittata

This recipe is from Martha Rose Shulman -a great chef and cookbook author.  I am also posting an easier recipe that has been in my repetoire for over 20  years.

Salt and freshly ground pepper to taste

Cornmeal for dredging
