I made this yesterday and really like the consistency. The greens did add a bitter element (which I like) but if you don't feel free to leave them out.

We had this the other night - but I did use bacon! It was great of course. Let me know if you tried it without and what you thought.

This was great! I am usually the first to push yellow squash to the side (it seems to be mushy most of the times I see it), but this was absolutely delicious.

I think we might have bok choy in our box (is this so?). And, the purple greens are??? I think I am going to have to get a picture dictionary for vegetables so that I will know.

The japanese eggplant last week made great enchiladas and the other eggplant made wonderful caponata for pasta.

We are enjoying finding our box each week. Thank you!

Chef Diane has posted some wonderful recipes, as always. In case you need more recipes, my favorite food blog, food 52, just had a contest for the best butternut squash recipe, and over 100 people posted very creative recipes:
http://www.food52.com/contests/181_your_best_butternut_squash_recipe

(earlier this year they also had contests for your best radish, cucumber and summer squash recipe and you can find these on their website as well).

Also, from that blog, tonight we are having a kale and persimmon salad with the great bunch of kale that I just got in my box:
http://www.food52.com/recipes/7556_kale_and_persimmon_salad

Enjoy your veggies!

Also wanted to thank ya'll for the awesome variety that came in my box this week! And thanks for putting a label telling me what the little bags of herbs were. Last week I wasn't quite sure what I was getting. It made my day when I got my box that evening! Thanks!

Never had eaten Armenian cukes before. Think I like it better than regular cucumbers. Making vegetable lasagna tonite using the eggplant and squash.

The okra I received this week looks good! Going to fry some and use the other half in gumbo/jambalaya with shrimp.

Do ya'll grow green onions or cilantro?
